The drops come up in batches every hour, glazed while the oil is still talking. Sweet potato pies on Thursdays. King cakes from December through Mardi Gras. If you smell something, that's how you know.

A perfected twist on the New Orleans classic pastry — that's how we say it on the bag, and that's how we mean it. The Buttermilk Drop is our namesake: a hand-rolled, buttermilk-leavened cousin to the donut hole, glazed while it's still warm to the touch.

We bake them in batches all morning. People come from across town for them, get in line on N. Dorgenois at six in the morning, leave with paper bags that don't make it home. That's been the rhythm of this corner for as long as anyone in Tremé remembers.
